Mincemeat Pie c/o great-great grandma

Mincemeat Pie

Ingredients
(Small) English roast - baked, shredded*
3-4 diced apples
3/4 cup dark brown sugar
1/2 cup raisins
1/2 cup apple cider
1 Tbs. vinegar
1 1/2 tsp. orange peel - grated
1 1/2 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. clove
1/4 cup brandy

Directions
Mix all ingredients in a large pan.  Heat to hot.  Turn off heat.  Add brandy.  Place mixture in covered bowl in refrigerator for 2-3 days, stirring daily.

To bake - heat again, then spoon mixture into pie shell.  Bake according to crust directions.

*To bake roast:
Bake at 350 degrees for 2-3 hours, depending on size, in covered baking dish, with half of the dish filled with water.
